Lamingtons/澳洲林明顿

这款蛋糕是澳洲名甜品,以昆士兰总督林明顿(Governor of Queensland from 1896 - 190l)命名,相传总督的家雇不小心把海绵蛋糕掉进朱古力浆中,为免浪费,总督建议将蛋糕蘸上椰丝享用,怎料效果不错,自始便成为当地官方典礼的必备甜品。

Lamingtons
280 g All-purpose flour
2 tsp Baking powder
1/4 tsp Salt
113 g Unsalted butter, at room temperature
150 g Granulated white sugar
2 pcs Eggs
1 tsp Pure vanilla extract
120 ml Milk
#Chocolate Frosting:
454 grams Confectioners' sugar, sifted
30 g Cocoa powder
42 g Margarine
120 ml Milk
#Coating:
2 cups Unsweetened desiccated coconut, finely ground

林明顿蛋糕砖
280克 中筋粉
2小勺 烤粉
1/4小勺 盐
113克 无盐室温牛油
150克 白砂糖
1小勺 香草精
120毫升 牛奶
#巧克力糖霜:
454克 糖粉
30克 可可粉
42克 植物牛油
120毫升 牛奶
#装饰:
2杯 椰丝

1. Preheat oven to 180C/350F and place oven rack to middle position.Butter the bottom and sides of a 26x16x4cm cake pan. Set aside.
烤箱预热至180C/350F。烤架置于烤箱中间层。准备一个 26x16x4厘米的长形烤模,给烤盘四周和底面都均匀抹上一层油备用。
2. In a large bowl sift together the flour, baking powder, and salt. Set aside.
取一个大盆,把面粉,烤粉和盐混合过筛备用。
3. In bowl of electric mixer, beat the butter until soft. Add the sugar and beat until light and fluffy (about 2-3 minutes). Add eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.
用电动搅拌器把牛油打软后,加入砂糖搅打至牛油松发。大约要2-3分钟。加入鸡蛋,每次加一个,打匀后再添加另一个。搅打过程中,要不时把粘在搅拌盆四周的牛油刮下一起搅打。加入香草精搅打至所有材料完全均匀。
4. With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with flour.
把搅拌器调到低速,把面粉和牛奶分3次交替加入牛油混合物中。先加面粉,再加牛奶,最后也是以面粉收尾。
5. Spread the batter into the prepared pan and smooth the top with an offset spatula. Bake in a preheated oven for approximately 30 minutes, or until a toothpick inserted in the center of the cake comes out clean.
把蛋糕糊倒入备好的烤盘中,用塑料刮刀抹匀表面。入预热烤箱烘焙30分钟左右。牙签插入取出后干静即可。

6. Cool the cake in its pan on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Re-invert. Once the cake has completely cooled cut it into 15 2-inch (5 cm) squares. Wrap the cake in plastic wrap and refrigerate for several hours or even overnight. The reason for doing this is that it is much easier (less crumbs) to coat a cold cake with frosting.
原盘晾凉10分钟,然后倒扣在架上,取出蛋糕后,翻到正面晾凉。然后切成15份2寸的方块。盖上保鲜膜放到冰箱冰上几小时。如果步急着吃,干脆隔夜冰镇。这样子挂霜容易些。
7. Chocolate Frosting: Place the confectioners' sugar, cocoa powder, butter and milk in a heatproof bowl over a saucepan of simmering water. Stir the mixture until it becomes smooth and of pouring consistency.
把巧克力糖霜的所有配料混合到一个耐热的碗里,放到个盛满热水的盆里,隔热把所有原料拌至可以流动的液体且匀滑。
8. To assemble Lamingtons: Put the squares of cakes on a serving plate lined with a baking sheet. Have ready the coconut on a large box or a plate and the chocolate frosting. Spoon or ladle the chocolate frosting over each square of cake, making sure you cover all sides. With a knife transfer the chocolate covered cake to the plate of coconut and roll the cake in the coconut, covering all sides. Gently transfer the lamington to a clean wire rack to set. Once the Lamingtons have set, store in an airtight container for several days.
把蛋糕砖放到一个铺了烤纸的餐盘上。把椰丝和糖霜也都准备好。把巧克力糖霜均匀淋在蛋糕砖,让每面都要挂到糖霜。然后用小刀子将其移到椰丝盒里,让蛋糕砖均匀滚上一层椰丝。糖霜完全凝固后放到保鲜盒里存放上几天都没有问题的。

呵呵。。。这个不是啦,最近收拾整理图片,发现这个我还没有在这里发,就帖了。

这个够肥的但是很香很好吃,还好都是我LG解决了。。。。
