宫保松仁豆腐+酱烧阿拉斯加狭鳕鱼

350克 豆腐
30克 松仁
3个泡椒
3-4瓣 蒜末
2支 青葱
#酱汁:
1大勺 砂糖
1大勺 黑醋
2大勺 辣椒酱
3大勺 水
2大勺 美极汁
1小撮 食盐
350 g Tofu
30 g Pine nuts
3 Pickled chillies
3-4 clove Garlic, minced
2 stalk Scallions
#Sauce
1 tbsp Sugar
1 tbsp Black vinegar
2 tbsp Chilli sauce
3 tbsp Water
2 tbsp Maggie sauce
Pinch of salt

1. 豆腐切成1寸左右的丁状。青葱洗净切成松仁大小。酱汁材料放到小碗里调匀备用。烧热油锅,入豆腐炸至金黄色出锅,沥干油备用。
Cut the tofu into inch-cubes. Clean the scallions and cut into pine-nut-sized pieces. Combine together all the sauce ingredients in a small bowl. Heat up a skillet with oil and fried diced cubes until golden brown. Drain.

2. 锅中留半勺油,入泡椒,蒜末和松仁炒香。豆腐回锅,倒入调好的酱汁翻炒至豆腐均匀上色,随即入葱花和盐翻炒兜匀即可出锅。
Save half spoon of oil in the skillet and add in pickled chillies, minced garlic, and pine nuts. Stir until aromatic. Return the tofu to the skillet and then pour in the prepared sauce. Gently stir until all tofu are coated with the sauce. Sprinkle the chopped scallions over and toss until all ingredients are well-combined and flavours have mingled.

Alaska Pollock In Teriyaki / 酱烧阿拉斯加狭鳕鱼
300 g Alaska Pollock fillets, frozen
1/2 tsp Black pepper powder
1/2 tbsp Cornstarch
2/3 tbsp Cooking oil
1-2 Ginger slices
3 tbsp Teriyaki sauce
300克 冻狭鳕
1/2小勺 黑椒粉
1/2大勺 玉米淀粉
2/3大勺 食用油
1-2片 姜
3大勺 照烧汁
1. Thaw the fish fillets slowly in the refrigerator. It takes about 12 hours, so put it in the fridge the night before you need it. Rinse and pat them dry with a kitchen towel. Evenly sprinkle the fish with black pepper powder. Let sit for 10 minutes, and then pat with cornstarch.
将冰狭鳕放到保鲜柜隔夜慢慢解冻。这大约需要12小时,所以前一晚取出放到冰箱就很方便了。洗净抹干,切对半后放入碗里。均匀洒上黑椒粉腌10分钟后拍上玉米淀粉。
2. Heat up a pan with oil until hot. Add in ginger slices and fish halves. Pan-fry until it starts to caramelise. Swab extra grease from the frying pan and fish away with kitchen paper. Pour in teriyaki and simmer over the medium-low heat, turning once and cook until the sauce is thick and syrupy.
烧热油锅,放入姜片和鱼肉,中火煎至表面微焦。用厨巾抹去锅和鱼肉的油脂。然后倒入照烧酱汁,中小火候煎至酱汁收干。

看起来很好吃的样子.
上周,偶也买了很多鳕鱼,没有试过这种做法. 偶做的是浮云鳕鱼羹和清蒸鳕鱼, 也很美味的$ok$
